How Grease Duct Fires Start — and the Scheduled Visit That Prevents Them

Every commercial kitchen fire shares a first act: cooking produces grease-laden vapor, the exhaust pulls it upward, and along the way it cools and condenses onto the duct walls. Service after service, the layer builds where nobody in the kitchen ever looks. NFPA’s data finishes the story: 61% of restaurant structure fires involve cooking equipment, and failure to clean is a factor in 22%.

The Ignition

A flare-up on the line — a fryer boil-over, a grill flame — climbs to the filters and hood. In a clean system, a bad moment. In a greased system, a fuse: flame enters the plenum, finds the deposit, and the duct becomes a chimney of fuel running to the roof. It’s why departments find these fires at the rooftop fan, and why a “small” hood fire can involve a whole building — or the neighbors sharing your block.

Why Wipe-Downs Don’t Change the Odds

Cleaning the canopy and filters removes the grease you can see and leaves the fuse loaded — a sticker without safety. NFPA 96 describes cleaning the entire exhaust path to bare metal, with access panels so the whole duct can actually be reached, for exactly this reason. What compliant includes.

Solid Fuel Means Monthly

Wood and charcoal add creosote — faster-building, more combustible — which is why NFPA 96 puts solid-fuel operations on a monthly cycle. The smoker that upgraded the menu upgraded the schedule with it.

The Unglamorous Prevention

A trained, insured company on your tier’s schedule, cleaning hood to fan, photographing before and after, leaving the report and the sticker. Do that and the 2 a.m. duct fire is somebody else’s story. Skip it and the odds are NFPA’s.
